Lemon Blueberry Overnight Oats


Prep Time: 15 minutes | Chill Time: 8 hours | Total Time: 8 hours 15 minutes

Ingredients:

  • For the oats:

    1 cup rolled oats*

    2 tbsp chia seeds

    2 tbsp hemp hearts

    1 cup milk

    1 tsp vanilla extract

    1/2 tsp lemon zest

    1/4 tsp salt

  • For the blueberry compote:

    2 cups blueberries, fresh or frozen

    1 tbsp chia seeds

    1 tbsp honey

    1-2 tbsp water

    1 tbsp lemon juice

    1 tsp lemon zest

Instructions (yields 2 servings):

  • Add the blueberries, honey, lemon juice, and 1 tablespoon of water to a small saucepan over medium heat.

  • Cook for 5–8 minutes, stirring occasionally, until the blueberries begin to burst and release their juices.

  • Use the back of a spoon or spatula to gently mash about half of the blueberries, leaving some whole for texture.

  • Remove from the heat and stir in the chia seeds and lemon zest, if using.

  • Let the compote cool for 10–15 minutes. As it cools, the chia seeds will absorb the liquid and naturally thicken the mixture.

  • Transfer to an airtight container and refrigerate for at least 1 hour before serving.

  • To a medium bowl, add the oats, chia seeds, hemp hearts, milk, vanilla, lemon zest, and salt. Whisk until well combined.

  • Divide half of the oat mixture between 2 airtight containers, then add a layer of the blueberry mixture, followed by the remaining oat mixture. You will most likely have leftover blueberry compote.

  • Cover and refrigerate for at least 4 hours, or overnight for the best texture.

  • When ready to serve, top each serving with desired toppings and enjoy!
