Lemon Blueberry Overnight Oats

Ingredients:
For the oats:
1 cup rolled oats*
2 tbsp chia seeds
2 tbsp hemp hearts
1 cup milk
1 tsp vanilla extract
1/2 tsp lemon zest
1/4 tsp salt
For the blueberry compote:
2 cups blueberries, fresh or frozen
1 tbsp chia seeds
1 tbsp honey
1-2 tbsp water
1 tbsp lemon juice
1 tsp lemon zest
Instructions (yields 2 servings):
Add the blueberries, honey, lemon juice, and 1 tablespoon of water to a small saucepan over medium heat.
Cook for 5–8 minutes, stirring occasionally, until the blueberries begin to burst and release their juices.
Use the back of a spoon or spatula to gently mash about half of the blueberries, leaving some whole for texture.
Remove from the heat and stir in the chia seeds and lemon zest, if using.
Let the compote cool for 10–15 minutes. As it cools, the chia seeds will absorb the liquid and naturally thicken the mixture.
Transfer to an airtight container and refrigerate for at least 1 hour before serving.
To a medium bowl, add the oats, chia seeds, hemp hearts, milk, vanilla, lemon zest, and salt. Whisk until well combined.
Divide half of the oat mixture between 2 airtight containers, then add a layer of the blueberry mixture, followed by the remaining oat mixture. You will most likely have leftover blueberry compote.
Cover and refrigerate for at least 4 hours, or overnight for the best texture.
When ready to serve, top each serving with desired toppings and enjoy!
