Mini Cinnamon Apple Crisps

Ingredients:
For the apple filling:
1 and 1/2 large apples (1 granny smith and 1/2 sweeter variety)
1 tbsp light brown sugar
1 tbsp granulated sugar
1 and 1/4 tsp cornstarch
1/2 tsp ground cinnamon
1/8 tsp ground nutmeg
1/8 tsp ground cloves
1/8 tsp salt
For the crisp topping:
2 tbsp unsalted butter, cold and cubed
2 tbsp old-fashioned oats
3 tbsp flour
1 tbsp light brown sugar
1 tbsp granulated sugar
1/2 tsp ground cinnamon
Pinch of salt
Instructions (yields 4 crisps):
Preheat the oven to 350°F and butter 4 small ramekins. Place them on a baking sheet and set aside.
In a large bowl mix together the sugars, cornstarch, spices and salt.
Peel and core the apples before slicing into 1/2-inch cubes. Add the apples to the sugar mixture and toss to coat. Evenly divided the apples among the 4 ramekins and set aside.
In a medium bowl, stir together the oats, flour, sugars, cinnamon, and salt. Use a fork or your hands to cut the butter into the mixture until it resembles wet sand and clumps together. Evenly sprinkle the mixture over the apples.
Bake for 40 minutes or until the topping is golden brown and the apple layer is bubbling. Allow to cool before eating. Serve with a big scoop of vanilla ice cream!
Cover and store in the fridge for 3-4 days or in the freezer for 2-3 months.
