Mini Cinnamon Apple Crisps


Prep Time: 10 minutes | Cook Time: 40 minutes | Total Time: 50 minutes

Ingredients:

  • For the apple filling:

    1 and 1/2 large apples (1 granny smith and 1/2 sweeter variety)

    1 tbsp light brown sugar

    1 tbsp granulated sugar

    1 and 1/4 tsp cornstarch

    1/2 tsp ground cinnamon

    1/8 tsp ground nutmeg

    1/8 tsp ground cloves

    1/8 tsp salt

  • For the crisp topping:

    2 tbsp unsalted butter, cold and cubed

    2 tbsp old-fashioned oats

    3 tbsp flour

    1 tbsp light brown sugar

    1 tbsp granulated sugar

    1/2 tsp ground cinnamon

    Pinch of salt

Instructions (yields 4 crisps):

  • Preheat the oven to 350°F and butter 4 small ramekins. Place them on a baking sheet and set aside.

  • In a large bowl mix together the sugars, cornstarch, spices and salt.

  • Peel and core the apples before slicing into 1/2-inch cubes. Add the apples to the sugar mixture and toss to coat. Evenly divided the apples among the 4 ramekins and set aside.

  • In a medium bowl, stir together the oats, flour, sugars, cinnamon, and salt. Use a fork or your hands to cut the butter into the mixture until it resembles wet sand and clumps together. Evenly sprinkle the mixture over the apples.

  • Bake for 40 minutes or until the topping is golden brown and the apple layer is bubbling. Allow to cool before eating. Serve with a big scoop of vanilla ice cream!

  • Cover and store in the fridge for 3-4 days or in the freezer for 2-3 months.
