Mini Cinnamon Apple Crisps
Prep Time: 10 minutes | Cook Time: 40 minutes | Total Time: 50 minutes
Ingredients:
For the cinnamon apple filling:
1 and 1/2 large apples (1 granny smith + 1/2 sweeter variety)
1 tbsp light brown sugar
1 tbsp granulated sugar
1 and 1/4 tsp cornstarch
1/2 tsp ground cinnamon
1/8 tsp ground nutmeg
1/8 tsp ground cloves
1/8 tsp salt
For the crisp topping:
3 tbsp all-purpose flour (option for gluten-free)
2 tbsp rolled oats*
1 tbsp light brown sugar
1 tbsp granulated sugar
1/2 tsp ground cinnamon
Pinch of salt
2 tbsp unsalted butter, cold and cubed (option for dairy-free)
Instructions (yields 4 crisps):
Preheat the oven to 350°F and butter 4 small ramekins. Place them on a baking sheet and set aside.
In a large bowl, mix together the sugars, cornstarch, spices, and salt.
Peel and core the apples before slicing into 1/2-inch cubes. Add the apples to the sugar mixture and toss to coat. Evenly divide the apples among the 4 ramekins and set aside.
In a medium bowl, stir together the oats, flour, sugars, cinnamon, and salt. Use a fork or your hands to cut the butter into the mixture until it resembles wet sand and clumps together. Evenly sprinkle the mixture over the apples.
Bake for 40 minutes or until the topping is golden brown and the apple layer is bubbling. Allow to cool before eating. Serve with a big scoop of vanilla ice cream!

While oats are naturally gluten-free, they are often processed in facilities that also handle wheat, barley, or rye. If you have celiac disease, choose certified gluten-free oats to minimize the risk of cross-contamination.
