Small Batch Apple Streusel Muffins

Ingredients:
For the muffins:
1/4 cup unsalted butter, melted
6 tbsp granulated sugar
2 tbsp light brown sugar
1 large egg, room temperature
3 tbsp Greek yogurt
3 tbsp milk
1/2 tsp vanilla extract
1 cup all-purpose flour (option for gluten free)
2 tsp baking powder
1 tsp ground cinnamon
1/4 tsp salt
1/8 tsp ginger
1/8 tsp nutmeg
1/8 tsp cloves
1/2 apple, peeled and chopped
For the streusel:
2 tbsp butter, cold and cubed
2 tbsp old-fashioned oats
3 tbsp all-purpose flour (option for gluten free)
1 tbsp light brown sugar
1 tbsp granulated sugar
1/2 tsp ground cinnamon
Pinch of salt
Instructions (yields 10 muffins):
Preheat oven to 425°F. Line a muffin tin with liners and set aside.
In a small mixing bowl, combine all ingredients for the streusel. Use a fork or your hands to clump the mixture together until it resembles wet sand.
In a large mixing bowl combine the melted butter and sugars, and whisk until incorporated. Add the egg and whisk. Mix in the Greek yogurt, milk and vanilla extract.
In a third mixing bowl, combine the flour, baking powder, spices and salt. Add to the bowl with the wet ingredients and mix. Fold in the apples using a rubber spatula.
Scoop the batter into the prepared muffin tin, filling about 3/4 of the way. Sprinkle the tops of each muffin with streusel, gently pressing it into the batter so it sticks.
Bake for 5 minutes at 425°F, then turn oven down to 350°F and bake for an additional 15 minutes, until muffins are golden brown and spring back to the touch.
Remove from the oven and allow to cool before serving.
