Chocolate Chip Skillet Cookie for Two
Prep Time: 5 minutes | Cook Time: 15 minutes | Total Time: 20 minutes
Ingredients:
1/4 cup unsalted butter
2 tbsp light brown sugar
1 tbsp maple syrup
1 large egg yolk, room temperature
2 tsp vanilla extract
1/2 cup + 2 tbsp all-purpose flour (option for gluten-free)
1/4 tsp baking soda
1/8 tsp salt
1/4 cup chocolate chips
Flaky sea salt, for sprinkling
Vanilla ice cream, for topping
Instructions (yields 2 servings):
Preheat oven to 350° F. Lightly grease a 6-inch cast iron skillet and set aside.
Melt the butter in a small saucepan over low heat, stirring occasionally until light brown specks appear (there should be a nutty aroma).
Combine the browned butter, light brown sugar, and maple syrup in a bowl. Stir until smooth. Add the egg yolk and vanilla and mix until combined.
Add the flour, baking soda, and salt. Mix until no streaks of flour remain.
Fold in the chocolate chips.
Spread batter evenly in the prepared cast iron skillet. Sprinkle the top with a little sea salt. Bake for about 15 minutes or until golden brown. Be careful not to overbake your cookie; you want it to be slightly gooey.
Remove from oven and let cool on a wire cooling rack for 10-15 minutes.
Serve with vanilla ice cream!
