Chocolate Chip Skillet Cookie for Two

Ingredients:

  • 1/4 cup unsalted butter

  • 2 tbsp light brown sugar

  • 1 tbsp maple syrup

  • 1 large egg yolk, room temperature

  • 2 tsp vanilla extract

  • 1/2 cup + 2 tbsp all-purpose flour (option for gluten-free)

  • 1/4 tsp baking soda

  • 1/8 tsp salt

  • 1/4 cup chocolate chips

  • Flaky sea salt, for sprinkling

  • Vanilla ice cream, for topping

Instructions (yields 2 servings):

  • Preheat oven to 350° F. Lightly grease a 6-inch cast iron skillet and set aside.

  • Melt the butter in a small saucepan over low heat, stirring occasionally until light brown specks appear (there should be a nutty aroma).

  • Combine the browned butter, light brown sugar, and maple syrup in a bowl. Stir until smooth. Add the egg yolk and vanilla and mix until combined.

  • Add the flour, baking soda, and salt. Mix until no streaks of flour remain.

  • Fold in the chocolate chips.

  • Spread batter evenly in the prepared cast iron skillet. Sprinkle the top with a little sea salt. Bake for about 15 minutes or until golden brown. Be careful not to overbake your cookie; you want it to be slightly gooey.

  • Remove from oven and let cool on a wire cooling rack for 10-15 minutes.

  • Serve with vanilla ice cream!
