White Chocolate Raspberry Blondies


Prep Time: 10 minutes | Cook Time: 50 minutes | Total Time: 1 hour

Ingredients:

  • 1/2 cup unsalted butter, melted

  • 2/3 cup granulated sugar

  • 2 large eggs, room temperature

  • 2 tsp vanilla extract

  • 1 and 1/3 cups all-purpose flour (option for gluten-free)

  • 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1 cup raspberries, fresh or frozen

  • 2/3 cup white chocolate chips

Instructions (yields 16 blondies):

  • Preheat oven to 350°F and line a square baking pan with parchment paper on all sides. Set aside.

  • In a bowl, mix the flour, baking powder, and salt together. Set aside.

  • Melt the butter in the microwave or a small pan over the stove. Transfer the melted butter to a medium-sized bowl.

  • Add both of the sugars and whisk until the mixture resembles a paste that pulls away cleanly from the side of the bowl.

  • Add the eggs and vanilla and whisk again.

  • Pour in the dry ingredients until just combined. Next, gently fold in the raspberries and white chocolate chips.

  • Pour the batter into the prepared baking pan and use a spatula to spread evenly.

  • Bake for 25-35 minutes. The top of the blondies should be crinkly and a toothpick inserted into the center should have a few wet crumbs, but not wet batter.

  • Let the blondies cool completely before slicing and serving!
