White Chocolate Raspberry Blondies
Prep Time: 10 minutes | Cook Time: 50 minutes | Total Time: 1 hour
Ingredients:
1/2 cup unsalted butter, melted
2/3 cup granulated sugar
2 large eggs, room temperature
2 tsp vanilla extract
1 and 1/3 cups all-purpose flour (option for gluten-free)
1/2 tsp baking powder
1/2 tsp salt
1 cup raspberries, fresh or frozen
2/3 cup white chocolate chips
Instructions (yields 16 blondies):
Preheat oven to 350°F and line a square baking pan with parchment paper on all sides. Set aside.
In a bowl, mix the flour, baking powder, and salt together. Set aside.
Melt the butter in the microwave or a small pan over the stove. Transfer the melted butter to a medium-sized bowl.
Add both of the sugars and whisk until the mixture resembles a paste that pulls away cleanly from the side of the bowl.
Add the eggs and vanilla and whisk again.
Pour in the dry ingredients until just combined. Next, gently fold in the raspberries and white chocolate chips.
Pour the batter into the prepared baking pan and use a spatula to spread evenly.
Bake for 25-35 minutes. The top of the blondies should be crinkly and a toothpick inserted into the center should have a few wet crumbs, but not wet batter.
Let the blondies cool completely before slicing and serving!
