Pumpkin Loaf

Ingredients:
1 and 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/2 cup light or dark brown sugar
1 tsp baking soda
1/4 tsp baking powder
3/4 tsp salt
2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground ginger
1/4 tsp ground cloves
1/4 tsp ground allspice
1 cup pumpkin puree
1/2 cup canola oil
2 large eggs, room temperature
1/3 cup milk of choice
1 tsp vanilla extract
Instructions (yields 10-12 slices):
Preheat oven to 350°F and line a 9×5-inch loaf pan with parchment paper. Set aside.
In a large bowl, mix together the flour, sugars, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, cloves, and allspice until combined.
Make a well in the center of your dry ingredients. Pour in the pumpkin, oil, eggs, milk, and vanilla extract. Whisk the wet ingredients until incorporated, then fold them into the dry ingredients until just combined.
Bake for 30 minutes, then cover the pan with tin foil to prevent excess browning of the top of the loaf. Bake for an additional 20 minutes, or until a knife inserted in the center of the loaf comes out clean.
Allow the loaf to cool before slicing and serving.

If you’d like, you can substitute 2 teaspoons of pumpkin pie spice for the ground nutmeg, ginger, cloves, and allspice. Still add 2 teaspoons of ground cinnamon to the mixture.
