Pumpkin Loaf


Prep Time: 10 minutes | Cook Time: 50 minutes | Total Time: 1 hour

Ingredients:

  • 1 and 1/2 cups all-purpose flour

  • 1/2 cup granulated sugar

  • 1/2 cup brown sugar

  • 1 tsp baking soda

  • 1/4 tsp baking powder

  • 3/4 tsp salt

  • 2 tsp ground cinnamon

  • 1/2 tsp ground nutmeg

  • 1/2 tsp ground ginger

  • 1/4 tsp ground cloves

  • 1/4 tsp ground all spice

  • 1 cup pumpkin puree

  • 1/2 cup neutral oil

  • 2 large eggs, room temperature

  • 1/3 cup whole milk (option for dairy-free)

  • 1 tsp vanilla extract

Instructions (yields 10-12 slices):

  • Preheat oven to 350°F. In a large bowl, mix together the flour, sugars, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, cloves, and all spice until combined.

  • Make a well in the center of your dry ingredients. Pour in the pumpkin, oil, eggs, milk, and vanilla extract. Whisk the wet ingredients until incorporated, then fold them into the dry ingredients until just combined.

  • Line a loaf pan with parchment paper, and pour the batter into the pan. Bake for 30 minutes, then cover the pan with tin foil to prevent excess browning of the top of the loaf. Bake for an additional 20 minutes, or until a knife inserted in the center of the loaf comes out clean.

  • Calories: 218

  • If you’d like, you can sub the ground nutmeg, ginger, cloves, and all spice for 2 tsp pumpkin pie spice. Still add 2 tsp of ground cinnamon to the mixture.
