Prep Time: 10 minutes | Cook Time: 20 minutes | Total Time: 30 minutes
Ingredients:
1/2 cup unsalted butter, melted
3/4 cup granulated sugar
3/4 cup sour cream (sub Greek yogurt)
1/2 cup whole milk
2 large eggs, room temperature
2 tsp vanilla extract
1 and 3/4 cups all-purpose flour
1/2 cup cocoa powder
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
3/4 cup dark chocolate chips
1 cup fresh cherries or 2/3 cup dried cherries*
Instructions (yields 14 muffins):
Preheat oven to 425°F. Line two muffin tins with liners and set aside.
Mix the flour, cocoa powder, baking powder, baking soda, and salt together in a bowl. Set aside.
In a separate bowl, whisk the melted butter and sugar together until well combined. Whisk in the sour cream, milk, eggs, and vanilla extract.
Pour the dry ingredients into the wet ingredients and fold together with a spatula until completely combined. Be careful not to overmix. The batter will be very thick.
Fold in the chocolate chips and cherries. See recipe note if using fresh cherries.
Bake in the oven at 425°F for 5 minutes, then turn down to 350°F, and bake for another 15 minutes. The muffins should spring back to the touch, and a toothpick inserted into the center of a muffin should come out clean. Repeat with the remaining muffin tin.
Remove from the oven and allow to cool before enjoying.
