Blueberry Crumble Bars

Ingredients:
For the crust and crumble:
1 and 1/2 cups almond flour
1 and 1/2 cups rolled oats*
1/4 tsp baking soda
1/4 tsp salt
1/2 cup coconut oil, melted
1/4 cup maple syrup
1 tsp vanilla extract
For the blueberry filling:
2 and 1/2 cups blueberries, fresh or frozen
1/3 cup maple syrup
3 tbsp cornstarch
1 tbsp lemon juice
1 tsp vanilla extract
Instructions (yields 16 bars):
Preheat oven to 350°F. Line an 8x8-inch pan with parchment paper. Set aside.
Combine the flour, oats, baking soda, and salt together in a bowl. Add in the coconut oil, maple syrup, and vanilla extract and stir until well combined.
Divide the mixture in half and press half into the bottom of the prepared pan to form the crust. Set aside.
Add the blueberries to a saucepan over medium heat. Use a fork to mash the blueberries. Stir in the maple syrup, cornstarch, lemon juice, and vanilla extract. Bring the mixture to a boil, then simmer over low heat for 5-7 minutes, or until thickened.
Pour the blueberry mixture over the crust and spread into an even layer.
Then, using your fingers, top the blueberry layer with the remaining crumble mixture.
Bake for 30-35 minutes, or until the crumble is golden. Remove from the oven and allow to cool completely before cutting.
