Blueberry Crumble Bars


Prep Time: 15 minutes | Cook Time: 35 minutes | Total Time: 50 minutes

Ingredients:

  • For the crust and crumble:

    1 and 1/2 cups almond flour

    1 and 1/2 cups rolled oats*

    1/4 tsp baking soda

    1/4 tsp salt

    1/2 cup coconut oil, melted

    1/4 cup maple syrup

    1 tsp vanilla extract

  • For the blueberry filling:

    2 and 1/2 cups blueberries, fresh or frozen

    1/3 cup maple syrup

    3 tbsp cornstarch

    1 tbsp lemon juice

    1 tsp vanilla extract

Instructions (yields 16 bars):

  • Preheat oven to 350°F. Line an 8x8-inch pan with parchment paper. Set aside.

  • Combine the flour, oats, baking soda, and salt together in a bowl. Add in the coconut oil, maple syrup, and vanilla extract and stir until well combined.

  • Divide the mixture in half and press half into the bottom of the prepared pan to form the crust. Set aside.

  • Add the blueberries to a saucepan over medium heat. Use a fork to mash the blueberries. Stir in the maple syrup, cornstarch, lemon juice, and vanilla extract. Bring the mixture to a boil, then simmer over low heat for 5-7 minutes, or until thickened.

  • Pour the blueberry mixture over the crust and spread into an even layer.

  • Then, using your fingers, top the blueberry layer with the remaining crumble mixture.

  • Bake for 30-35 minutes, or until the crumble is golden. Remove from the oven and allow to cool completely before cutting.
