Zucchini Fritters

Zucchini fritters are a fantastic way to utilize those little guys that are about to spoil. Perfect as an appetizer, side, or even a light main dish, these fritters are so easy to make and can be paired with a variety of dips and sauces!


Prep Time: 20 minutes | Cook Time: 20 minutes | Total Time: 40 minutes

Ingredients:

  • 5 medium zucchini

  • 1 and 1/2 tsp salt, divided

  • 2 large eggs, slightly beaten

  • 1/2 cup green onions, chopped

  • 3/4 cup all-purpose flour (option for gluten-free)

  • 1 tsp baking powder

  • 1/2 tsp black pepper

  • 2 tbsp olive oil, for frying

Instructions:

  • Wash the zucchini and trim off the ends. Using the large holes of a box grater, grate the zucchini and place it in a large mixing bowl. Stir in 1 teaspoon of salt and let sit for 10 minutes.

  • After 10 minutes, squeeze the zucchini by the handful or wring it out in a clean kitchen towel or cheesecloth over the sink to remove excess moisture. Transfer the drained zucchini to a clean mixing bowl.

  • Add the green onions and eggs and stir to combine.

  • In a separate bowl, whisk together the flour, baking powder, remaining salt, and black pepper together. Add the dry ingredients to the zucchini mixture and stir until well combined.

  • Heat a thin layer of olive oil in a large skillet or on a griddle over medium heat. Once hot, scoop about 1/4 cup of the zucchini mixture onto the skillet for each fritter, gently flattening the tops with a spatula.

  • Cook for 3–4 minutes per side, or until golden brown and crisp. Repeat with the remaining batter, adding more oil as needed.

  • Serve warm with sour cream or your favorite dipping sauce.
