Zucchini Fritters
Zucchini fritters are a fantastic way to utilize those little guys that are about to spoil. Perfect as an appetizer, side, or even a light main dish, these fritters are so easy to make and can be paired with a variety of dips and sauces!

Ingredients:
5 medium zucchini
1 and 1/2 tsp salt, divided
2 large eggs, slightly beaten
1/2 cup green onions, chopped
3/4 cup all-purpose flour (option for gluten-free)
1 tsp baking powder
1/2 tsp black pepper
2 tbsp olive oil, for frying
Instructions:
Wash the zucchini and trim off the ends. Using the large holes of a box grater, grate the zucchini and place it in a large mixing bowl. Stir in 1 teaspoon of salt and let sit for 10 minutes.
After 10 minutes, squeeze the zucchini by the handful or wring it out in a clean kitchen towel or cheesecloth over the sink to remove excess moisture. Transfer the drained zucchini to a clean mixing bowl.
Add the green onions and eggs and stir to combine.
In a separate bowl, whisk together the flour, baking powder, remaining salt, and black pepper together. Add the dry ingredients to the zucchini mixture and stir until well combined.
Heat a thin layer of olive oil in a large skillet or on a griddle over medium heat. Once hot, scoop about 1/4 cup of the zucchini mixture onto the skillet for each fritter, gently flattening the tops with a spatula.
Cook for 3–4 minutes per side, or until golden brown and crisp. Repeat with the remaining batter, adding more oil as needed.
Serve warm with sour cream or your favorite dipping sauce.
