Peaches & Honey Scones


Prep Time: 10 minutes | Cook Time: 15 minutes | Total Time: 25 minutes

Ingredients:

  • 1 and 1/4 cups all-purpose flour, plus more for dusting

  • 1 and 1/4 cups whole wheat flour

  • 1/4 cup granulated sugar

  • 2 and 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1/2 cup unsalted butter, cold and cubed

  • 1/2 cup + 2 tbsp milk, divided

  • 1 large egg, beaten

  • 1 tbsp honey

  • 1 tsp vanilla extract

  • 1 cup (~2 small) fresh peaches, peeled and diced

  • 1-2 tbsp raw sugar, for topping

Instructions (yields 14 scones):

  • Preheat oven to 400° F. Line a baking sheet with parchment paper and set aside.

  • Whisk the flours, sugar, baking powder, and salt together in a bowl. Cut in the butter cubes with a pastry cutter.

  • Mix 1/2 cup milk with the egg in a small bowl. Add the honey and vanilla and mix well. Pour the wet ingredients into the flour-butter mixture and mix with a spatula. Fold in the peaches.

  • Turn out the dough onto a lightly floured surface and divide the dough in half. Gently pat each half into a 1/2-inch to 3/4-inch thick circle and cut into 14 wedges.

  • Transfer the scones to the prepared baking sheet, brush the tops with the remaining milk, and sprinkle with course sugar.

  • Bake for about 15 minutes or until golden brown. Remove from the oven and allow to cool.
