Cookies & Cream Cookies

Ingredients:
6 tbsp (85g) unsalted butter
6 tbsp (75g) light or dark brown sugar
2 tbsp (25g) granulated sugar
1 large egg, room temperature
1 and 1/2 tsp vanilla extract
1 cup (120g) all-purpose flour
1/2 tsp baking powder
Heaping 1/8 tsp baking soda
1/4 tsp salt
1/4 cup white chocolate chips
7 Oreos, roughly chopped or crushed
Instructions (yields 18 cookies):
Melt the butter over medium heat. Once melted, immediately remove from heat, pour into a heat-proof bowl, and set aside for 10 minutes to cool slightly.
Add the sugars to the brown butter and whisk until combined. Add the egg and vanilla and whisk again until well combined.
Add the flour, baking powder, baking soda, and salt to the wet ingredients and mix until no streaks of four remain. Be careful not to over mix! Fold in the white chocolate chips and Oreos.
Place the bowl in the refrigerator to chill for 30-60 minutes.
Once ready to bake, preheat the oven to 350°F and line two large baking sheets with parchment paper. Use a cookie scoop to portion dough and roll into smooth balls. You may have to let the dough stand if it’s too hard after chilling.
Bake the cookies for 10-12 minutes, or until the edges are set and the center is still gooey.
Remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to finish cooling.
