Tillie’s Pupcakes


Prep Time: 5 minutes | Cook Time: 20 minutes | Total Time: 25 minutes

Ingredients:

  • 1 large egg white

  • 1/3 medium banana, mashed

  • 1/3 cup pumpkin puree

  • 2 tbsp peanut butter

  • 2 tbsp olive oil

  • 1/3 cup whole wheat flour

  • 1/4 tsp baking powder

  • Whipped cream or Greek yogurt, for topping

Instructions (yields 4 cupcakes):

  • Preheat oven to 350° F. Grease a muffin tin with butter and set aside.

  • In a medium bowl, whisk together the egg white, banana, pumpkin, peanut butter, and olive oil. Add the flour and baking powder—mix until well combined.

  • Scoop batter evenly into the prepared muffin tin. Bake for about 20 minutes or until firm. Remove from the oven and allow to cool.

  • Top each cupcake with whipped cream or a dollop of Greek yogurt and garnish with your dog’s favorite biscuit!
