Tillie’s Pupcakes

Ingredients:
1 large egg white
1/3 medium banana, mashed
1/3 cup pumpkin puree
2 tbsp peanut butter
2 tbsp olive oil
1/3 cup whole wheat flour
1/4 tsp baking powder
Whipped cream or Greek yogurt, for topping
Instructions (yields 4 cupcakes):
Preheat oven to 350° F. Grease a muffin tin with butter and set aside.
In a medium bowl, whisk together the egg white, banana, pumpkin, peanut butter, and olive oil. Add the flour and baking powder—mix until well combined.
Scoop batter evenly into the prepared muffin tin. Bake for about 20 minutes or until firm. Remove from the oven and allow to cool.
Top each cupcake with whipped cream or a dollop of Greek yogurt and garnish with your dog’s favorite biscuit!
